A Culinary Passion Transforms Into Delicious Fermented and Pickled Foods
Matt’s journey to producing his line of pickled and fermented products includes attending culinary school, catering, and working in restaurants. His culinary passion is infectious and strong as ever, as is his appreciation for the health benefits of fermentation.
He loves to experiment with flavors, textures, and the fermentation process, remarking, “I’m working with a live product that is influenced by so many variables such as salinity, time, temperature, and type of produce.”
Bulldog Brinery products officially launched in 2022, but Matt recently moved his business and home to Richmond! He participates in two busy local farmers markets and is now sold in Good Foods Grocery and six other local stores.

When asked why he chose Good Foods Grocery, he replied, “It’s the kind of store I’m all about, with high quality food and an emphasis on local businesses. The staff are welcoming and helpful and the customers are interested in trying new things.”

Matt and his wife use the sauerkraut in grain bowls, salads, sandwiches and even potato salad.
“We add it to anything that needs a zing or crunch,” he noted.
The kimchi is a staple for their rice and noodle dishes, while the pickled pineapple is a favorite addition to seafood tacos, ceviche, pizza and even barbecue.
Here’s an insider tip: Matt will have Bulldog Brinery’s fermented tangy cantina salsa ready soon! His longer-term aspirations include a brick and mortar to celebrate fermented food and enjoy direct contact with the Richmond community.
When he’s not busy as a chef, you can find Matt and his wife, along with their bulldog (of course!) Freya, exploring outdoor activities, farmers markets, and the local food scene.
