Recipe: Stuffed Avocados

1 avocado, halved and pitted
1/2 organic lemon
Kosher or sea salt
Freshly ground black pepper
1/4 c plain yogurt
1 tbsp red wine vinegar
2/3 c shredded, pre-cooked chicken
1 celery stalk, diced
1 tsp finely chopped dill, or green herb of choice

Directions: Scoop out avocado, leaving a small border of fruit on the inner shell. Squeeze lemon juice over the scooped avocado, dice, and set aside. Season avocado shells lightly with salt and pepper. In medium bowl, whisk to combine yogurt and red wine vinegar. Add chicken, celery, dill, and reserved avocado. Toss until coated. Divide between two avocado halves. Serve immediately.
